I love Trader Joe’s plentiful and varied mix of gluten-free products that are available in their stores. I shop there as often as I can. I have been very impressed with the quality of their gluten-free products.
This bread, however, isn’t one of my favorites primarily because of the texture. The texture is fine, seemingly lacking the satisfying consistency of bread that has risen from yeast (or whatever leavening is used). Very few gluten-free breads have been able to create that consistency that I long for.
On the positive side, this is a quality bread and the big loaf yields slices that are larger than you find typically in gluten-free bread, and therefore it makes a sandwich that is nearly equal in size to one made with wheat bread. Furthermore, the price for this bread at Trader Joe’s was very reasonable.
Maybe I’m a uniquely difficult customer with unrealistic expectations when it comes to gluten-free bread, and I am grateful to have gluten-free bread available, but I do continue with my quest for that perfect slice of gluten-free bread!
