Gluten Free Aisle

Hello, my name is Vally Mulford.

About 30 years ago, I was diagnosed with Dermatits Herpetaformis, a form of celiac disease which affects the skin. The doctor prescribed a gluten-free diet, but also offered prescriptions as an alternative to help deal with the disease symptoms. I opted to go for the prescription route as the gluten-free option seemed unworkable for me at the time. After a couple of years of being on different prescriptions, and noticing some side effects, I finally decided that it would be best to give the gluten-free diet a try.  Little did I know what I was in for, and where this journey would lead….

Mind you, this was over 25 years ago, and at the time, gluten free products were practically unheard of...only in specialty markets. So, there I was, slowly and carefully making my way down aisle after aisle in my local grocery store, reading label after label hoping to find something that would fit my new diet. Most of the online information that I could find was from people who shared recipes about gluten-free cooking. I was a working dad with five children at home, and my wife also worked and so neither of us had much time to attempt gluten-free cooking, especially when I was the only gluten-free person out of seven in the family.

One day, I while traveling with my family, during a layover at an airport. Everyone grabbed hamburgers at an airport restaurant. I recall being seated in my airport lounge, attempting to wrap my hamburger in yellow corn tortillas, only to have the tortilla crumble in my hands. It was an embarrassing mess. I ended up attempting to finish my meal by looking for a plastic fork. In that moment, I hated my gluten free predicament and yearned for the day when some company, somewhere, someday, would someday make gluten-free bread, or hamburger buns…anything to make my gluten-free life easier.

And now…here we are!! Gluten-free products are everywhere. I---for one---am grateful to companies who put their gluten-free products out there for gluten-free consumers like you and me. Yes, they can be expensive, and therefore, I have to maintain a budget when purchasing gluten-free food, but I appreciate the many opportunities that I now have to maintain a gluten-free diet.
