Girl Scout Toffee Tastic Cookies

This is my favorite gluten-free cookie from the Girl Scouts.  The cookies are thick, a bit crunchy, but the rich, toffee/buttery flavor makes it hard to eat just one. Too bad they are only available during fund raising.
