I have purchased Girl Scout cookies in the past, but they came in a box, (and I think they were macaroons). They were excellent! So, I was a bit surprised to find that my only choice this year was chocolate chip cookies. I’d never seen these available before so I’m not exactly sure how the availability of different gluten-free cookies varies from year to year.
These cookies are soft and chewy, and the chocolate chips are just perfect. The ingredient list shows that the main flour used is oat flour. I love oat flour! The ingredient list also includes chickpea flour which I personally have never enjoyed in gluten-free baking. I think it leaves a bit of an after taste. …but that is purely a personal preference. If you’d like a soft, chewy chocolate chip cookie, and are willing to pay a bit extra to help out a good cause, then these cookies are a great bargain. I will continue to purchase as the opportunity arises.
