Back in the days when I could eat gluten, one of my favorite comfort foods was a bowl of instant ramen noodles. The unique flavor and texture of the noodles, and the satisfying soup broth made this a regular treat for me. The fact that ramen noodle packets were inexpensive, easy to prepare, and available everywhere made it an easy go-to food.
Finding gluten-free equivalents for those ramen soup packs has proven to be a challenge for me. It was with some eagerness that I decided to open and try these rice (ramen) noodles. The box of noodles comes with three separate rice noodle packs and these rice noodles are packaged to look like ramen noodles.
I need to make another attempt with these noodles, because when cooking the noodles, just when I thought they were done, I did a quick taste test, and found they weren’t cooked quite enough. About a minute later, they were unfortunately, a little over-cooked and soggy.
I paired these noodles with the company’s ramen broth and unfortunately, neither the noodles, or the ramen broth, came close to replicating the experience I longed for of a bowl of ramen noodles.
